So a recipe that incorporates items from a Farmbox that will keep you warm in during these cold days.
Root Veggie Soup

Ingredients:
- 1 Large Onion - Diced
- 2 Tbs Olive Oil -
- 1 tsp chopped garlic -
- 1 tsp chopped ginger -
- 2 Parsnips - peeled and diced
- 2 Carrots - peeled and diced
- 4 C Diced Rotabaga, Turnips, or Kohlrabi -
- 4 C Diced Butternut Squash -
- 1 Large Apple - Chopped
- 1 tsp Cumin -
- 1 tsp Curry Powder - sweet or hot
- 1/2 tsp ground corriander -
- Zest of one orange -
- Salt to taste -
Instructions:
- In a heavy soup pot sauté the onion in olive oil over med heat until clear.
- Add the garlic & ginger & stir until they soften slightly.
- Stir in the veggies and apple & cook stirring constantly for about 4 min.
- Then add the seasonings & stir for 2 more min to toast the spices.
- Pour in 4 C water, bring to a boil, reduce heat
- Simmer for about 20 min until the veggies soft.
- Remove from heat, & puree the soup with an immersion blender.
- Stir in the orange zest & approx. ½ tsp of salt to taste.
- Serve hot.
